- 50 gms of roasted almonds or chopped walnuts
- 500 gms mixed vine fruits
- 2tbsp dry cognac
- 250 gms chopped dates
- 3 tsp baking powder
- 2 tsp mixed spice
- 250 gm whole meal flour
- 300ml water
- 1 orange zest
- 1 lemon zest
- 4 tbsp warm water.
Mix the vine fruits in the cognac.
Melt the chopped dates in 4 ml of water and while doing this it has to be ensured that the heat is low and the mixture is stirred continuously. Mix the vine fruits with this mixture and keep it in a cool place for at least 3 hours.
Once the flour, the baking powder and the mixed spice is sifted, mix it with the chopped nuts and the lemon and orange zests.
Mix the fruit mixture into it and stir it well so that no lumps remain.
This mixture now has to be poured on a greased loaf tin.
Preheat the oven and put this mixture inside at a temperature of 195 C for 50 minutes. Poke with a skewer, if it comes clean, the cake is done.
